Mango Jerk Chicken & Yellow Rice (One-Pan, No Bones, No Nonsense)
20 mins prepServes 6
Sweet heat, juicy chicken, and yellow rice that actually behaves. Boneless thighs, mango jerk glaze, and one pan because I refuse to wash more dishes than necessary. And before anyone starts typing: this is NOT authentic jerk. It’s just good.
1. Prep the Chicken: In a large bowl, add chicken, Lawry’s, black pepper, jerk sauce, mango juice, and olive oil. Toss well to coat.
2. Build the Rice: Grease a casserole dish. Add yellow rice, stewed tomatoes, chicken broth, mango juice, onion, garlic, and butter/oil. Stir to combine.
3. Assemble: Lay the marinated chicken evenly on top of the rice. Sprinkle lightly with extra Lawry’s.
4. Bake: Cover tightly with foil and bake at 375°F for 45 minutes.
5. Uncover & Finish: Remove foil and bake an additional 15 minutes until rice is tender.
6. Broil: Broil 5 minutes to glaze and lightly caramelize the chicken.
